Where we keep our extra virgin olive oil.

"Inside our company there is the orciaia.
A magical, semi-underground room where the temperature remains constant all year round.

It is here that we store our extra virgin olive oil, in ancient terracotta jars of Impruneta.

To preserve the extra virgin olive oil you need: constant temperatures, no light, little oxygen in contact with the oil.

In our orciaia there are ideal conditions:
  • the room is basement, and this allows the temperature not to have excessive fluctuations;
  • the ancient jars are in Impruneta terracotta. Rather thick terracotta and therefore more insulating than modern stainless steel containers;
  • the oval shape of the jar means that the surface of oil in contact with the air compared to the volume it contains is low.

This is how the oil is maintained over time.
